Polpo Restaurants is a collection of projects creating distinctive restaurant environments that evolve alongside the brand while retaining the individuality of each location. Spanning a diverse range of sites across the UK, from former high street shops and restaurants to shipping containers and airport terminals, the collection shares a common ambition: to create warm, characterful spaces that feel authentic rather than formulaic.
Inspired by Russell Norman's travels through Venice and his instinctive, collector's approach to design, each restaurant interprets the brand in a subtly different way. Venetian cafés inform the intimacy, craftsmanship and materiality of the interiors, while sister brands such as Spuntino embrace a rougher New York aesthetic and Polpetto introduces a lighter, more feminine character. Rather than repeating a fixed design language, every project responds to its setting while contributing to the continued evolution of the group.
Existing buildings and their imperfections become an integral part of the design. Original brickwork, reclaimed timber and aged floors were retained wherever possible, complemented by textured plaster, linen fabrics and carefully sourced found objects. Low lighting, layered materials and tactile finishes create welcoming spaces where food, conversation and atmosphere become inseparable. Together, the projects demonstrate how a hospitality brand can evolve organically, with each restaurant developing its own identity while remaining unmistakably part of the same family.
